According to the builder, our floor-to-ceiling windows have been properly sealed from the INSIDE.
The exterior sealing is supposedly our responsibility...
How would you go about doing this?
There will be a fully covered terrace in front of all the windows... but I still think everything should be sealed correctly.
Or am I worrying unnecessarily?

Isn't it just about the step?
If I understand correctly, you are getting the house as a complete package from the builder, who is also supplying the windows?
In that case, I would not rely on any "builder-supplied" arrangements for the base waterproofing around floor-to-ceiling windows. If it gets damp, the builder is likely to blame your own work, which could lead to disputes.
Our window installer created a waterproof tray at this point using EPDM tape. However, in your case, you will likely need a smooth render to close off the exposed masonry and provide a suitable surface for the adhesive. Alternatively, liquid waterproofing could be an option.
