I want to start with the step in the outdoor area at my place. I plan to fill the area with recycled material and later lay stones in gravel.
Now to my question: What is the best way to seal the door area beforehand? Is EPDM sealing tape enough, or should I use liquid waterproofing?
A photo of the current condition is included.
I would appreciate advice on how to do this properly but also practically.

The sealing of the door or the extension frame on which the door rests should have been done before applying any other materials on the exterior. Yes, that is the slab foundation. No basement. Colored render on both sides.

The issue is that all material transitions (e.g., between the base profile and wall, or profile and floor slab) need to be sealed seamlessly. This should be done both with a pure sealing compound (for example, Remmers MB2K+ is suitable) and additionally reinforced with a crack-bridging tape (or molded pieces for corners) – which is then embedded into the sealing compound. This works and adheres best on material that is left as raw as possible (more precisely, sanded and/or primed according to the sealing compound manufacturer’s specifications).
Whether adhesion will be sufficient in your case, especially with colored pebble-dash render, is difficult to say... It is best to ask, for example, Remmers if they approve such an application.
