In our new build, we have smooth Knauf MP75 L gypsum plaster on the interior walls.
What is the best material to use for repairs?
We have partially repaired it with Knauf Multifinish, but it is too hard. When sanding, more of the surrounding gypsum plaster is sanded down, causing the coarse grains to become visible.

What is the best way to repair it? An answer you probably don’t expect: Just use Knauf MP 75 L again. You can find a bag in almost any hardware store for about 10 euros. That way, you’ll have exactly the same product 100%.

The plaster was smoothed with water, which caused the coarse grains to move to the back and the fine grains to the front. If I do repairs, the texture will be too coarse and won’t match the smooth rest of the plaster.

If I repair it, the patched area will be too coarse and won’t match the smooth surrounding plaster. If you can’t achieve it with the MP (it can be done manually like the plasterers do) and the current surface is baby smooth, then use Uniflott finish or Weber paint filler extra fine.
Normally, the 75L is used to create Q2, right? Afterwards, the painter usually works on Q3, and if that is not sufficient, the finish can be done with ready-mixed filler. (We used "RAW" ready-mixed filler lightly, 10kg (22 lbs) buckets cost just under 45 €) easy to work with and easy to sand.
In our case, the painter had already applied a thin layer (spray filler) over the Q2 MP75L, and when I sanded too much of the fine filler, only that layer appeared, while the grain texture remained hidden underneath.
