My idea is to plaster the bricks first, then insulate the wooden beam with mineral wool, and finally tape the vapor retarder flush with the brick wall. I would appreciate any tips... best regards

It looked almost exactly the same for us. In consultation with the site manager and the carpenter, we glued the last sheet (for us OSB instead of a membrane) onto the top plate. Then we also sealed the underside of the plate where it rests on the masonry. To help the adhesive tape stick better, we applied a bead of cartridge adhesive on the masonry and smoothed it out.
Your method also works and—depending on what is on the other side of the top plate—might even be the more efficient option in terms of insulation. If it’s just an attic, a smooth finish on the top row of bricks might be sufficient as well.
