Hey,

if you want to install a PoE access point on the ceiling, the prerequisite is an existing LAN cable. Does the cable end get a standard network plug that is then connected directly to the access point, or does it get a socket, and a short patch cable is used to connect the two sockets—the one on the cable and the one on the PoE device? Is it correct that with an existing PoE switch, only the LAN cable coming from the ceiling is needed, meaning no power adapter that would have to be installed somewhere in the ceiling structure?

For suspended ceilings or sufficiently sized conduit pipes, the keystone is sufficient.

Well, drywall attached to a metal framework. This means there isn’t much space left for the vapor barrier beneath the insulation between the attic ceiling and the roof apex where the junction box would be located.

That’s enough. The Keystone adds 2.5 cm (1 inch) in height. Then, patch cables and the access point will be mounted over the hole.

So the LAN cable with the keystone jack would be located in the ceiling (cavity), and only the patch cable would effectively come out of the opening?

Exactly. The LAN cable should be long enough for you to pull it out. Attach a patch cable and then push it back in...

I would also recommend an in-wall back box.

What I have seen as an emergency solution was a spacer ring between the access point and the ceiling. The hollow space created was then used to hide the keystone module and the short patch cable.
