ᐅ Plastering window reveals on the inside: use cement-based plaster or something else?

Since searching online hasn’t made things any clearer and I’m just as confused as before: which plaster would you recommend for plastering the reveal and the windowsill on the inside? Cement-based plaster? Or something else?
Here’s the issue: I will soon be replacing the windows in the adjacent building (a converted barn). These are old wooden windows that were plastered onto brickwork with cement-based plaster (?). Since I plan to lower the interior windowsill by at least 7 cm (3 inches) by removing a row of bricks, I assume this won’t be possible without causing damage. I will either have to remove all the plaster or, since I don’t want to replaster the lintel on the inside, just repair the areas where damage occurs. Additionally, I will probably need to level the removed windowsill surface somewhat before attaching the new windowsill.
