Briefly and to the point:

Long orange spirit level made of wood placed horizontally against the wall

Orange spirit level lying horizontally on a wall, construction work, bubble level visible

Orange spirit level placed across a door frame during interior finishing

Is this a defect or not?

The door installer says that a few millimeters are not a defect. I think it is, since both doors are next to each other and this sloppy work bothers me.

A visual defect in any case! Even one that can be fixed with little effort. You probably wouldn’t have used the level on it if it hadn’t already been visible like that.

I’m afraid I doubt it can be done with little effort. If the door frame is readjusted, both the joint specialist and the painter will need to come back. The joint is actually a minor issue. However, the painter’s cost will definitely be around $1,000. The problem is that the textured paint has a very fine grain. This means the entire wall needs to be filled and repainted...
Can I demand the builder to fix the defect including covering all consequential costs?

That is definitely frustrating, but it probably won’t bother you later on. I don’t think you have the right to demand a defect repair here if the contractor refuses. Especially not that they should cover all the costs.

If anything, I see a chance for compromise here: they redo their part, and you take care of the rest...

That would be a problem for me. How this is resolved depends on the overall relationship with the contractors. We were accommodating and not overly strict on some issues. In this case, we would neither have a debate nor any payment for a correction.
