ᐅ Older Building – Transition Between New Drywall Partition and Ceiling

I recently replaced an old cinder block wall with a drywall partition and now need to connect it to the existing ceiling. Since the transition on all the other walls was done using a coving (and this wall also had a coving), I would like to do the same again.
The drywall profiles are screwed from below onto the wooden beam, and the ceiling consists simply of boards with about a 1cm (0.4 inches) gap between them, covered with reed, and then, I think, plaster. Most of the reed is now missing in the gap. (see picture)
My questions and points where I would appreciate some advice are:

My questions and points where I would appreciate some advice are:
- What backing material would make sense? – Re-nailing reed | Screwing the drywall scraps onto the boards
- What to use for filling/putty? – At the hardware store, almost everything based on gypsum is either all-purpose filler or joint compound...
- For the coving (radius approximately 7–8cm (3–3.1 inches) estimated) – I would do this in two steps. First, fill the gap flush with the ceiling, then shape the coving on top.
- For a coving – where should a separation strip be placed? – Intuitively, I would place it against the wall (even without coving) and apply filler up to the ceiling.
