In our kitchen, the old window needs to be replaced (end of service life reached, about 30 years old, double glazing, plastic frame). I am now concerned about the possible issue of mold following the window replacement (difference in U-values between walls and window, or temperature differences in uninsulated corners).

The kitchen has an uninsulated wall (hollow brick 30 cm (12 inches)) around the kitchen window area, as well as an uninsulated wall due to an attached garage (next to the kitchen, here hollow brick 24 cm (9.5 inches)). Retrofitting insulation on the garage wall (garage interior side) is quite complicated for various reasons and is not being considered, also due to financial constraints.

What should be done? A new window is necessary, but the overall effort should remain affordable. Are there new windows available somewhere with a moderate U-value around 1.3–1.5 (sources)? That would be sufficient for me and close to the U-value of the wall. Ventilation is another option, but it would need to be cleaned regularly (3-4 times a year), which could become inconvenient at an older age.

Thank you very much for any suggestions or tips.

What to do?
Install windows, ventilate, and heat. Then you will have no problems 99% of the time.

You should visit a local window manufacturer and inquire about a plastic window with a construction depth of approximately 70mm (3 inches) and double glazing with a thermal transmittance (Ug) of 1.1 W/m²K. The window manufacturer should also offer you ventilation accessories that they consider appropriate for the conditions. Make sure to ventilate manually enough if there is no mechanical ventilator.

In your other thread https://www.hausbau-forum.de/threads/wie-trennwand-zw-garage-und-wohnung-daemmen.45171/, it is a pumice concrete wall (?), and if you tinker with individually weighed pros and cons, the feared consequence of mold from your actions is almost certain.
