I have been thinking about building an extension and then adding a pool. But the pool room is always quite humid—won't everything start to mold if it’s constantly damp?

That is complete nonsense. There are good solutions for this; otherwise, every swimming pool in the world would develop mold, and they simply do not. If I were you, I would visit a reputable trade fair and get proper advice. Then you can still decide, but I honestly cannot imagine that every pool in the world has mold.
