I wanted to ask if any of you know how to make jam yourself without having to add so much sugar, while still keeping the jam shelf-stable.

If everything is done correctly, including disinfecting the jars, a jam or puree can last for about 1 year. As already mentioned, jars with glass lids and rubber seals are really great because if something does spoil, the lid will pop off the jar, so you immediately know what’s going on.

I would also say that the jam or fruit spread is good for one year, provided that you maintain cleanliness. For example, I fill the sterilized jars and then pour a splash of rum on top. After that, I light the rum and immediately close the jar. This is how I preserve my jams.
