Hello.
We had an appointment with a landscape gardener who told us that installing 1m (3 ft) high angle stones, also called L-bricks, would only make sense starting in spring. We originally thought they could also be installed in winter. The landscape gardener said there could be problems with the foundation, especially concerning the concrete. It apparently requires certain outdoor temperatures to cure properly.
What are your thoughts on this?

For example, if you pour the foundation in the morning and set the blocks in the afternoon, I believe frost down to about -3°C (27°F) at night is not problematic. The curing process itself also generates some heat. Additionally, the foundation is protected from wind at night thanks to the L-shaped block and the surrounding soil.
How many meters (feet) do you plan to build?
If you are under time pressure, I would take that "risk," but if not, I would wait.
