who has a kitchen island with similar dimensions?
I’m not sure if the space beside the cooktop is sufficient, as I would like to have an 80cm (31.5 inches) wide cooktop.
Is a distance of 1m (39 inches) between the island and the kitchen counter enough?

I find 160cm (63 inches) to be too short, especially for an 80cm (31.5 inches) cooktop, and 140cm (55 inches) too deep.
Our kitchen island measures 180 x 90cm (71 x 35 inches). If there was more space available, 200 x 100cm (79 x 39 inches) would also work well—but for us, this size is sufficient. The cooktop is not centered on the 180cm (71 inches) length; there is 30cm (12 inches) on the left and 90cm (35 inches) on the right, where the preparation area is located. A width of 40 or 60cm (16 or 24 inches) would not be enough.
Ultimately, it also depends on the overall kitchen layout.
One meter (39 inches) is enough space between the counter run and the island if that one meter is not also used for other purposes (such as an additional traffic path). Also, one meter (39 inches) can be tight if drawers face each other in this area or if the property layout restricts space.
