after our interior doors were delivered and installed, I am quite surprised to see that the latch/bolt is made of plastic. This seems to be standard with several general contractors, but it was not even part of the samples we reviewed. What is the advantage, apart from it looking cheap?

We also have them in the house, never had them before. I only knew these things from public restrooms... but I never really gave them much thought. During the selection process, it was about the handles themselves (stainless steel, plastic, straight, curved...).
I was very pleased to find such an extra feature in our house, something new for me 🙂

I was also wondering why those parts are made of plastic.

I think you are focusing too much on habit. For example, an older person might appreciate that more, and perhaps a child as well.
