That should all be doable. With some persistence and inquiry, you can also find individual parts in the clearance section.

The upper cabinets 80 don’t seem to have a bent Pax back panel either, probably for reasons the IKEA expert mentioned. But I’ll take a closer look at that later as well.
I wouldn’t need to rotate them, right? Or what exactly do you mean? (I plan to remove the back panels from all cabinets placed against the exterior wall to prevent mold. The cabinets will be fixed to the wall for stability.)

2 base cabinets 60x80x60 (cm) (24x31½x24 inches) (each representing the bottom for bottom/ceiling of the tall cabinet)
1 tall cabinet 40x60x200 (cm) (15¾x24x79 inches) (side walls)
1 tall cabinet 80x37x200 (cm) (31½x15x79 inches) (Pax back panel... though I’m rather leaning towards simply stacking the back panels of the other cabinets and leaving a gap – we’ll see.)

IKEA-Experte20 Apr 2016 18:13It is definitely cheaper to have a back panel cut at a hardware store or lumber supplier, rather than buying a complete cabinet just for the back panel.

So, the idea is not to buy a tall cabinet.
The rest would be used: two 40cm (16 inches) base cabinets made from the side panels of the 80cm (31.5 inches) plus the bottom and top panels of the tall cabinet... only the metal fittings are missing. The 40cm (16 inches) back panel could also be cut from the tall cabinet if needed.
The rear ventilation gap is just under 1cm (0.4 inches), which seems too risky to me. And we have no alternative but the exterior wall. Since drawers will be used anyway, the missing back panel probably won’t be noticeable? (Does the oven usually keep the back wall in place?)

Regarding the back panels: I stand corrected, as I have now seen that, for example, an 80 x 100cm (31 x 39 inches) wall cabinet (carcass: 902.055.30) actually has packaging dimensions indicating a single-piece back panel. By the way, you can also find these in the clearance section—I recently got a huge piece for €1.50.
About "rotating" the side panels: what I meant is that if someone needs two cabinets with 40cm (16 inches) high side panels, they might only need one 80cm (31 inches) high carcass and can then cut the side panels into two pieces, using the cut-off sections "upside down." This way, you get 4 instead of 2 side panels (only for base cabinets) because the row of holes is equally spaced from the top and bottom edges of the side panel. For the two pseudo side panels per 40cm (16 inches) wide drawer in my picture above—so 4 in total—I only had to get one 40cm (16 inches) wide carcass.
Update: for the rails, simply buy an aluminum U-profile at the hardware store if you can’t find anything suitable in the clearance section. Then cut two recesses and drill holes yourself. It’s easy to do and very sturdy.

I asked at IKEA Berlin Tempelhof; at least there you can order spare parts without a receipt. In the clearance section, they didn’t have any parts like that, nor any back panels.
The used carcasses looked, as expected, very worn... with only a 25-40% discount, they would really only be worth it to me as "cutting material." But I’ll keep that as an option in the back of my mind.

First, regarding the second issue: If I understand correctly, you want a bench under the window with two 40cm (16 inches) drawer base cabinets on either side of the stove.
Why don’t you use two 40x60x40cm (16x24x16 inches) METOD wall cabinets, item number 60224078, for the bench? They cost around 17 euros each for the cabinet body. You already placed one as a "replacement part" to the left of the oven, right?
Just add feet underneath and a countertop on top… There is a 40x80cm (16x32 inches) front available. Done. You won’t have to bother with the 40cm drawer base cabinets anymore, which cost about 20 euros per cabinet body.
If you replace them, you’ll save 17 euros and one small cabinet body, but you’ll lose the top panels/metal rails that come with those drawer cabinets. However, those parts can be ordered as spare parts—I don’t know the price or delivery time. You can find the order number on the assembly plan of a cabinet that includes the rails you want.
Personally, I wouldn’t bother for just 17 euros.
