We are currently in the preliminary planning phase and are working on the layout for our living/dining/kitchen floor. It comes down to either having a really spacious kitchen with lots of cabinets and storage or a somewhat smaller kitchen with less countertop space but including a pantry.
What are your experiences with this? Which option would you prefer and why?

It depends on the individual case, and you have shared far too little information for an assessment, such as floor plans, how many people live in the household, whether the pantry offers additional storage space for the vacuum cleaner, and so on...

NicolettaHere is the floor plan. The idea would be to omit the pantry, extend the kitchen cabinets/island, and possibly add another wall with shallower cabinets (about 40 cm (16 inches) deep) on the back side of the kitchen cabinets.
We made a last-minute change and swapped a pantry for the shower in the “guest bathroom,” next to the 5.70m (19 feet) kitchen area (with four tall cabinets, sink with draining board, and work surface) and a 1.80 x 1.16m (6 feet x 3.8 feet) island with a downdraft extractor. I’m familiar with having a pantry from my childhood, and we currently have a small storage room as well. It’s useful for hiding drinks, storing rarely used kitchen appliances, or keeping the vacuum cleaner within easy reach. Over time, I expect tissues, paper towels, some first aid or medicine supplies, gift wrap, shopping bags, baskets, and similar items will also end up in the pantry. Of course, all that can be stored in a large kitchen, but I prefer having a small separate room with shelves and boxes for miscellaneous stuff.

There are four of us, and storage would actually be needed for a vacuum cleaner, recycling bins for daily use (the large ones would be in the basement), some supplies, kitchen appliances that aren’t used very often, a stock of paper towels, and similar items. Nothing essential, but still somehow annoying if you have nowhere to store it.
