Here, the question also arises with a flat roof: Can it generally be said that a timber flat roof built by a carpenter is cheaper than a concrete ceiling (=roof) constructed by the structural builder?

Yes. From my own experience, it would have been about 3-4k € cheaper.
There are around 50 flat-roof buildings here, and none of them are made of wood. It’s just not done. If water gets in, the damage is disastrous. Don’t do it!

Thank you for the advice. We are currently trying to optimize costs, but that would be saving in the wrong place. May I ask what roof area the 3,000 to 4,000 euros difference referred to?

Just from the perspective of indoor air quality and overall performance, I would advise against a flat wooden roof, unless it is unavoidable in an existing building due to weight differences.

The shell construction does not offer as many opportunities for cost savings as the interior finishing and building services. I would rather focus on cutting costs there.
