Can anyone recommend a construction company in Upper Bavaria that builds turnkey houses using brick construction and with whom they were completely satisfied? I have already done a lot of research and spoken with other homeowners, but unfortunately, I haven’t found anyone who was fully happy. Experiences ranged from mediocre to disastrous.
Additionally, we would like to build with a focus on healthy living, but it seems there are hardly any companies that offer this nowadays.

The association "healthy living = only bricks" sounds to me like wishful thinking. Expanded clay, aerated concrete, calcium silicate, or pumice are also free of dioxins, carcinogens, and industrial-scale production ;-)
By the way, there are also brick manufacturers who work with prefabricated wall panels and operate nationally — so using a narrow search filter like "Upper Bavaria" can be unnecessarily limiting.

One must also be aware that not everything will run smoothly... All in all, I can say that we were satisfied with Schauer Bau from Rohrdorf, to be specific. We bought a turnkey house, so it was a developer model. However, as far as I know, they also offer general contracting services.

@11ant: There is a misunderstanding. I didn’t say that only bricks are healthy for living, but rather that I want to build in a healthy way using bricks. It’s not just about the bricks themselves; all other building materials also need to be healthy for living. So far, I have found very few suppliers who take this seriously. Just the bold statement "bricks, therefore healthy for living" is not enough for me.

It’s not just about the bricks themselves; all other building materials also need to be healthy for living. So far, I have found very few suppliers who take this seriously. @11ant: No, as I mentioned, no custom design.
The house was mostly pre-designed when we "joined in," as the previous interested buyer had withdrawn. Of course, we were still able to adjust some interior walls.
The construction process felt more like we were the actual homeowners: we had access to the construction site at any time, negotiated and settled additional work directly with the tradespeople, and so on.
Overall, it was a pleasant building phase with a trusting collaboration...
