ᐅ Combination of Existing Above-Rafter Insulation and New Between-Rafter Insulation?

Hello friends,
we are considering improving the energy efficiency of our house, starting with the roof. The house was built in 1980 and is a timber frame construction with a nice open gable end. To preserve this, about 10 cm (4 inches) of insulation was added on top of the rafters back then. However, this no longer seems to meet current standards. Now we are thinking about adding insulation between the rafters and then covering everything with drywall (possibly drywall only between the beams so they remain visible). We would rather not do it—but you do what you have to in order to reduce energy consumption. But generally: has anyone done this before? Are there any concerns—moisture risks, etc.? Any tips would be appreciated.
Here is a picture of the current open gable end. Are there other options or materials besides drywall?
