If you booked a kitchen installation and also purchased the countertops from Ikea, the installers should deliver a proper job. Otherwise, you still have the option to file a complaint about the installation. If you have a countertop from another source, they may refuse to install it or possibly do so for an additional fee, depending on the installer and the hourly rate. If you had the Ikea or third-party countertop prepared at a home improvement store, they might also refuse the installation because they can no longer guarantee their work.
It sounds a bit complicated, but the installers must strictly follow the specified work plans. Anything they do beyond that, for example, without charging extra, is purely a courtesy.
Best regards
