I'll keep it brief.
We engaged a company to build an extension to our bungalow based on a recommendation from my parents. This company had already completed an extension for them and did a decent job.
However, quite a few things went completely off track with our project. I don’t want to go into the details now. In the end, in autumn 2020, we involved the Building Owners’ Protection Association along with an expert, but even they couldn’t resolve the situation. At the beginning of December, it was agreed with the general contractor for the last time that they should be allowed to fix the defects. A date for this had been set but was postponed indefinitely due to bad weather.
So far, we haven’t heard anything from the contractor. Honestly, we don’t really want to anymore. We just consider it a learning experience and now want some peace. Now to my questions:
We haven’t received a final invoice yet. Will any authority eventually contact us to check if the extension is completed? The land registry office? Or will this just fade away?

Your post seems a bit scattered and lacking coherence.
But if your only question is whether "the authority" will come to enforce the completion of the construction work, the answer is: check the building permit / planning permission. Everything is stated there.
But generally speaking: no, because as the builder, you officially notify the building authority about the completion of construction with a corresponding completion notice.
After that, there may be acceptance procedures and surveying.
However, my impression is that the real problem lies somewhere else ...?!
