ᐅ Bought a large wooden cutting board at Ikea, and it has stains...??

Hello,
I bought a large wooden cutting board from Ikea for my kitchen, which I had stored in its original packaging (sealed in plastic) in the basement. Our basement is not damp, and we live in a new build!
Now I brought it upstairs after having several items from VÄRDE in my kitchen *happy*... and what do I see??
The included note inside the packaging is wrinkled and yellowed, but the worst part is that (I had the board standing upright on the floor in the basement) the bottom side must have absorbed moisture for about 10cm (4 inches) – there are dark spots.
What should I do? Should I have it trimmed at the hardware store? But then this side will surely be very rough, and even wood oil won’t fix that, right?
Or should I sand it? But how do I do that properly? Which sandpaper should I use (type/grade, etc.)? Sorry, but could you explain the steps to me in detail? I have never done this before...
If sanding is recommended, I don’t know how deep the dark spots are or how much I need to sand off.
Should I sand the whole board or only the areas with spots? Should both sides be sanded? Do you think the stains will disappear then? I just don’t want my nice thick board to be only one centimeter (0.4 inches) thick afterward, haha*, just kidding, seriously...
Do you think these strange spots could be hazardous to health? The board was expensive, and I really don’t want to just throw it away : (
