From my experience: I recently had a similar issue and simply used small rubber furniture wedges, which are very flexible and even non-slip! I found this extremely practical and it doesn’t look out of place at all.
Also: If you secure the shelves to the wall, you can be sure there will be hardly any wobbling. One more tip: If you have children at home, this kind of fixing is almost mandatory, especially for taller shelves like BILLY.

The unevenness is roughly between 0.5 and 1 cm (0.2 to 0.4 inches), mostly small steps in the solid wood plank flooring. This is an older building, so the floor isn’t perfectly level. The shelves will mainly hold books and will be placed against a wall that is also slightly uneven (not measured, but visually a bit tilted).
I will look into adjustable furniture feet, that sounds very practical. Are there any experiences on how well clamping between shelf and wall works with uneven walls? Or would an additional spacer be more advisable?
Also, I’m open to tips on how to minimize the visual impact of any necessary adjustments since the shelf will be very noticeable.
