It is important to me that the attachment is stable and long-lasting, but also that the wall is protected and no undue stress occurs. My walls are made of brick, though the surface may be somewhat less sturdy in places, so I am unsure whether anchors are necessary or if screws alone are sufficient.

Make sure that the drill bit matches the size of the wall plug and that the holes are drilled cleanly. By the way, the IKEA installation manual also recommends wall plugs for mounting on the wall, and there’s a good reason for that.
I once screwed a screw in without a wall plug myself – it came loose shortly after, and the bracket started to wobble. Since then, I prefer to avoid doing that.
If you want to rearrange the cabinets at some point, simply remove the screws and wall plugs and carefully patch up the holes.
