ᐅ Opinions on Floor Plan for Single-Family Home, Approx. 160 sqm, Frisian-Style House

Hello everyone,
My husband and I (currently without children, but that is expected to change in the near future) are planning a single-family home in the Frisian style with about 160 m² (1,722 sq ft) and a basement. Single-story construction is allowed.
We are still at the very beginning. The plot of land has been purchased, and construction is planned to start next year. We now want to request offers from several builders and architects. For this, we have created a list of specifications outlining what we want in the house, and I have also drafted a floor plan. I would appreciate your comments and suggestions on what could be improved or what we should pay attention to.

So now I finally see the actual floor plan.
I generally don’t like these cramped cloakrooms. Just imagine four people trying to leave the house at the same time. That can only lead to stress.
I find the utility room too small if it’s supposed to accommodate all the technical equipment as well.
As for the eat-in kitchen, I basically find it okay, but it’s very large, especially combined with the dining area in the living room. I would arrange that differently somehow. And as already mentioned, 2.76m (9 feet) for the dining bay is too narrow.
Upstairs, I personally prefer a large bathroom that is accessible without restrictions. If a second bathroom is desired, it should mainly be a shower room for the parents. Because, as often pointed out, children especially need to bathe more frequently or require assistance with showering and brushing their teeth up to at least about age 6.
Otherwise, I always find it difficult to understand the practicality of these DIY designs. There are simply too many factors like wastewater and exact measurements that we don’t usually consider.

We just had another meeting with a builder. From that, the following floor plans have been developed (which still closely resemble our original proposal). We will receive the exterior view only on Tuesday. Also included is the layout of the house on our plot.
We are building with a basement, which will house all the technical installations. The utility room is only intended for the vacuum cleaner and small items.
The knee wall is at 87.5m (287 ft 3 in). The room dimensions are shown in the drawings.
For the hallway on the upper floor, we are considering leaving the ceiling open to let light into the space through skylights. We think this would look quite nice.
Maybe you can get a better idea from the sketches now and provide a few tips.

So far, I haven’t found a floor plan like this anywhere on the internet. Most have 1 bathroom and 3 rooms on the top floor (attic).

Well, many are not that far off... In the related parallel forum, a similar floor plan is currently being discussed.
As a prospective builder, you gather ideas from the internet, sketch something, and then the building engineer/defensive architect almost reproduces it 1:1. The result is always THE similar design again.
I would extend the bathtub and toilet further into the room in the upper floor bathroom, meaning the knee wall should be pushed forward.
The kitchen is, as usual, not ideal – too many walking paths, and the table blocks the access to the two chairs by about 60 cm (2 feet).
Also, opinions are divided between a) families with children who want a walk-in closet and bathroom, and b) considerate waking and sleeping habits, meaning doors to the closet and bathroom are outside the bedroom.
Everyone probably has to gain experience with this themselves, especially when waking and sleeping times change, for example due to kids.
