I have a rather unusual request.
I am planning to build a house using timber frame construction within the next 5 years and want to do as much of the work myself as possible.
Therefore, I would like to offer my help as a construction assistant for current home builders in order to gain experience beforehand. I have some practical skills. My main focus is on the trades involved in interior finishing.
Do you know which platforms I could use to offer this?
I live in Leipzig.

If you want to work as a day laborer, just try googling in your city. If you prefer something more permanent, then approach companies directly.
Do you have free time during the day to just take off whenever you want?Unfortunately, I haven’t found anything on classified ads so far.

Would you just ask random people in a shopping district if someone without construction experience could assist with your interior work? Especially in areas like those, mistakes become very obvious.

Timber frame crews usually stay on site for 2-3 weeks during the installation of houses, including overnight stays, but they finish work on Fridays at noon and during the week no later than 5 pm.
I would rather suggest looking into DIY workshops offered by your local home improvement store.
Anything else is a bit of a harebrained idea.

However, there are no known success stories from this approach. Unfortunately, your available times do not fit well: as a helper for owner-builders, you would only be useful "on demand, but just in time." That means the owner-builder would have to rely on your spontaneous "yes" when they realize they have time that day; meanwhile, the general labor subcontractor would need you at other times. Still, try to find such a builder, but take time off when they can actually use your help. Usually, there are "relatives" for this role, as dealing with a stranger involves too much paperwork. Alternatively, you could try day labor; however, you would likely be the last choice there because recruiters have a good sense for workers suited for piecework.
Five years is a long period. You should be able to find opportunities if you limit your search to your circle of friends and colleagues. But now to the other aspect:

Drywall partition walls and drywall plumbing walls are commonly used in both timber-framed and masonry houses alike. In electrical work, you can only perform assistant tasks, and tiling is only suitable for non-professionals in medium-sized tiles (about 20cm (8 inches), neither the modern large formats nor mosaic tiles). You will save more by choosing a brick or block cladding rather than a plaster facade, compared to doing the pointing yourself. What has a lot of potential and is beginner-friendly is building a kit house yourself—usually made of aerated concrete blocks.
