But as I said, the staircase design just doesn’t work. It’s better to start over.

The ground floor will only have a guest bathroom. I was thinking of making the guest room a bit smaller and extending the bathroom a little.

How else should the stairs lead upstairs?

I don’t find the staircase to be a big issue.
Friends have the exact same staircase, and they don’t have any problems with dirt or anything like that.

You can’t really say it like that.
To what extent are you dependent on a building setback? Does it affect the overall dimensions of the house?
Does the zoning plan specify the roof orientation?
Just try an alternative.
For example, place the entrance on the north side or change the staircase direction.
Experiment with new room layouts.
Does it have to be a guest room? That limits your options on the ground floor significantly.
We also originally wanted an office on the ground floor, but that would have taken away a lot of space from the main rooms, and it wasn’t worth it to us.
Without a basement, it is difficult to have a large utility room (the only storage option, laundry room, and mechanical equipment need space!) plus an additional room on the ground floor.

I don’t like this upstairs hallway. It’s long, narrow, and dark. Unfortunately, many still think of hallways as wasted space. But that’s not the case. In our upstairs hallway, we have room for a wardrobe, shoe cabinet, and mirror. I would get rid of the small hobby room and just have a large hallway here, or maybe separate it from the hallway with a half-height partition wall. That would make the space feel much more open.
The walk-in closet will be quite dark; you’ll need artificial lighting even during the day to see anything.
In child’s room 1, you don’t have a good spot for the wardrobe. Either you bump straight into it when you open the door, or you block the window. Large windows are great, but windows and doors should always be planned with at least 65cm (25 inches) distance from the wall so there’s still space for furniture.
Do you have a basement? If not, the utility room will be quite small. If it houses the technical equipment and washing machine, there won’t be much space left for anything else.
I also see a problem in your living room: you always have to walk around the table to get to the terrace. I find that very inconvenient, especially with children or when you have gatherings.
For your guest toilet, I would move the door to the other side of the wall. That way, you’d get a nice niche on the right side of the corridor wall for a cabinet or coat rack, and in the guest bathroom you’d have the option to put a cabinet or some hooks for towels and bathrobes behind the door.

The hobby room is actually a home office. My wife can do her work-from-home there, provided the room is at least 7sqm (75 sq ft). So it has to stay. What do you mean by mirroring the bathroom on the ground floor? How else should the upper floor be arranged? I also considered placing the table directly next to the kitchen island.
