Symmetry isn’t quite that simple. I wouldn’t focus too much on symmetry. It’s much more important that you feel comfortable inside than how it looks from the outside.
However, I would definitely place the garage directly attached to the house. The utility room in the upper right corner practically calls for that. You can still access the garden by going around the left side of the house.
Also, I think it’s important to have the guest bathroom near the entrance. When you need to quickly use the restroom coming in from the garden, you don’t want to have to cross half the house. We have it elsewhere right now, and it’s really annoying.
I would put it where the pantry is now, then shift the pantry and kitchen slightly downward on the plan, and move the seating area a bit to the left. This way, you’ll get more space in the living room and can place the sofa against the top living room wall, with a nice view out of the window. As you planned it now, the area marked for dining/living is too much empty, unused space, while the living room feels too cramped.

It's more about having the knee wall height between 1.2 and 1.4 meters (4 and 4.5 feet). I know houses where there is almost no knee wall, which makes the rooms much smaller. We want to avoid that. We have 1.30 m (4 feet 3 inches)... that's not much. There will definitely be sloped ceilings. You said you want to avoid them as much as possible. Why not plan for a knee wall height of 180 or 200 cm (6 or 6.5 feet)?

Admit it: you basically want to reinvent the wheel! Garage at the back, terrace in front. Are you sure this is your plot? 😎:p
If I have time tomorrow, I will give some more thought to the floor plans for my 8 x 13 m (26 x 43 ft) house.
As you can see from my plot layout, placing the terrace on the west side works quite well. I am also located further north, and since the house is 2 m (6.5 ft) narrower, the terrace even fits within the building area on the south side. By the way, my house is drawn to scale on the plot.

The top priority is to keep utility lines as short as possible. The layout needs to be reconsidered here.
You would get your utility room passage to the garage at the front 😉
I can understand if that’s not necessary for your needs.
