next week our house will finally be assembled :-)
Since we only have beams on the floor of the attic, our crane operator offered to lift up the floor panels for us if we provide them.
What would you recommend for boards or panels in this case? And especially, how thick should they be?
It will only be used as a storage room and will never be converted; with a height of 1.20 m (4 feet), that would be very difficult anyway :-)

Please send some photos showing how you saw the wood lying on a beam. Or is it only supposed to go up to the upper floor?
Otherwise, use tongue-and-groove boards, about 2 cm (0.8 inches) thick.

Do I need to consider anything regarding sufficient ventilation for the insulation? The attic itself is not insulated.
I’m not familiar with tongue-and-groove either, but I guess the folks at the hardware store will know.

Tongue and groove boards are boards without tongue and groove. Not very nice, but cheap.
Insulation material doesn’t really need ventilation. Besides, there will be some forced ventilation because with your flooring, you probably won’t reach all the way into the deepest angled areas.
