I am considering leaving my shower open on two sides (with walls on the left and right approximately 1 meter (3 feet) apart and about 2 meters (6.5 feet) long).
Does anyone have experience with this? Is 2 meters (6.5 feet) enough, or should I plan for more?

So you want to leave your shower open at both the front and back and have planned a length of 2 meters (6.6 feet)? In other words, the shower area ends about 100cm (40 inches) away from the showerhead?
Then it will get quite wet outside the shower. Go to a swimming pool and measure how far the water sprays from the showerhead (they usually have large shower halls there where you can try this out 🙂 )

I wouldn’t recommend that either.
We currently have a 1.40 m (4 ft 7 in) long shower screen (so over one meter from the shower head to the opening), and water always splashes about 40 cm (16 inches) in front of the shower. Additionally, I’m concerned that many women might find it too cold since the surrounding air can freely pass through the shower area.
In conclusion: It looks very nice, but in my opinion, it’s completely impractical.

although this type of shower looks very stylish, I would also advise against it unless you hire a dedicated cleaning person... ;-)
Our showerhead is mounted on the front wall of the shower – the distance to the side entrance is 1.44 m (4 feet 9 inches) in our case. Water splashes almost exactly up to that point (1.44 m from the front wall) when using the rain shower showerhead. If you choose the waterfall setting, it even splashes all the way to the end of the 2.2 m (7 feet 3 inches) long shower.
